If you haven't decided what to put next to your Turkey this Thanksgiving, here's a side dish that is easy to prepare and delicious.
Roasted Root Vegetables
Roasting brings out the natural sweetness of the vegetables in this simple side dish. We use carrots, parsnips and potatoes, but there's no reason you can't add or substitute other root vegetables such as turnips or kohlrabi. Of course, you can use vegetables that you've grown in your garden or those purchased from the store or farmers market.
Ingredients (serves 10-12)
- 10 carrots
- 10 parsnips
- 10 fingerling potatoes
- Olive oil
- Salt & pepper
- Thyme, rosemary or sage (This is optional. Add two or three sprigs of one of these herbs to add a savory note to the dish)
Recipe
- Pre-heat oven to 400 degrees Fahrenheit
- Wash and peel the carrots and parsnips. Cut into 1/4" slices.
- Quarter the fingerling potatoes
- Place the vegetables into a large bowl and drizzle with 1/3 cup olive oil.
- Add 4-5 grinds of pepper and a tablespoon of salt. If you are using herbs, add the sprigs now.
- Mix with your hands so that the vegetables are evenly covered in olive oil.
- Place into a baking dish(es) and cook 30-45 minutes. Test with a knife - the vegetables should be tender when a knife is inserted into them.
