If you haven’t planted a winter garden before, I strongly encourage you to do so. Chard, kale, spinach, miners lettuce, arugula, beets, carrots, cabbage are all do well in the winter, particularly in the gentle climate we have here in Northern California.
Chard is one of my favorite vegetables for the winter garden; it’s a real standout when it comes to ease-of-growing and versatility in the kitchen. Just start your plants in the late summer or early fall so the plant has time to establish a good root system. The plant will then be able to support harvesting the outer leaves and have enough strength to replenish them. You’ll get a constant supply all through the winter if you do this. And can be used in soups, stir-fry, and even as a salad green if you remove the stem. Crisp and delicious and what great color on your plate.
